I’m sorry but when that first wave of cool air hits me, I can’t help but immediately look for my soup bowl. Is there a better way to appease your hunger on a chilly night? The answer is no. No there isn’t. And what better way to celebrate the new harvest moon than with pumpkin soup? I used to make a pumpkin and sausage soup full of cream, and not much else, but yesterday, I moved up in the world and made this tasty concoction full nutrients and happiness from mylifecookbook.com.
There were a couple things that I changed:
- I substituted spinach for kale.
- I chopped up the mushrooms, red peppers, and spinach really fine. (I don’t typically like mushrooms, but with them so small I did not notice them at all).
- I added about a half a cup of half & half to give it a little somethin’, somthin’ extra.
Hold onto your leggings and lattes girls, and give this recipe a whirl.
